Hello All!

 

Today I am sharing a few different recipes that I found recently online and tried out in the last few weeks. I am constantly looking up recipes and wanting to try out new meals and desserts! Facebook isn’t my favorite website ever, but I do like how users can share videos of different dishes being prepared and that you can easily save any video and view it whenever you want later on. I have been doing this frequently and I recently made two dinner dishes that I came across on Facebook.

The first recipe is a great one to use for meal prepping and makes four meals, which is perfect for those rushed weekday nights when you just want to zap something healthy. This recipe is called Chicken Burrito Bowls and it’s from Buzzfeed.com (who even knew that they had recipes?!) This dish combines chicken breasts with a variety of Mexican ingredients to create a healthy, flavorful dish! I really liked this meal and it was pretty easy to make considering that you end up with four meals! I made it extra easy on myself by picking up a package of cut up peppers and onions from the grocery store, so that I didn’t even have to bother with chopping anything! (#lazy) My only caveat is that four meals is kind of a lot and by the fourth night I was a little over eating this, so I would maybe half the recipe next time and just have meals for two nights. Chicken Burrito Bowls

 

The next recipe is called Italian Beef & Rice Skillet and I also found it on Facebook. This recipe appealed to me because the whole thing is cooked in one pan (even the rice) and I’m all about less dishes being used for an easier clean up! This one was really tasty as the Italian spices added great flavor and it smelled like delicious pizza while cooking! The final step of this recipe is to add cheese on top, but I only added cheese to just half in order to cut down on calories and make it a little healthier. My only complaint with this dish is that I felt that there was a little too much pepper. When I was making it, I double checked to really make sure that it called for a 1/2 teaspoon of pepper and it does, but I would probably go for 1/4 teaspoon next time as it was a little too peppery for my liking. With that being the only tweak, I would definitely make this again because it was a fairly balanced dinner, used only one dish, and was very easy to make. Italian Beef & Rice Skillet – half topped with cheese

The next two recipes are perfect for parties and I especially think would be great for any upcoming Super Bowl parties!! I stumbled upon this blog called Kevin & Amanda and they post mostly about traveling and food. A lot of their food recipes sounded super good and easy, so I decided to I try out their Crunchy Taco Cups Recipe. They are basically tacos made in muffin tins and they were really delicious! Plus, you can eat them easily without utensils which makes for a great party food and they looked so appetizing! This recipe uses wonton wrappers as the taco shells and this was my first time using them in a meal. I totally bought too many as I was in a huge rush at the store and couldn’t remember how many the recipe called for! Needless to say, I will definitely be making these again and if anyone has any good recipes that use wonton wrappers, let me know! My only tip regarding this recipe is to really drain the grease from the meat before adding the tomatoes. When I made them I skipped this part of draining and just burned off as much grease as possible. However, with this meal any added grease sort of soaks into the wontons taking away the crunch from the shell. The crunch was most enjoyable and a big part of this dish, so I would definitely make sure that I really drained all the grease from the meat before moving on to adding the taco seasoning and tomatoes.

While I was on Kevin & Amanda’s blog I decided to look up some of their dessert recipes and I came across one for homemade oatmeal cream pies! ♥ Who doesn’t love the Little Debbie oatmeal cream pies?! I am such a fan and since the recipe looked fairly easy and I already had most of the ingredients on hand, I decided to make these right away!  When making these I was surprised by the large amount of vanilla extract in them and by how thick the cookie dough was, but in the end I was very happy because they turned out like this:

These were SOOOOO GOOD!! The cookies were soft and chewy and the cream filling added just the perfect touch of delightful sweetness. They tasted so similar to a Little Debbie oatmeal cream pie, but even better! They are a little rich so really one was enough to eat, but they tasted so good that I definitely ate more like three or four in one night!! Oops. The only downside I would say about these is that they don’t stay fresh tasting for that long. The first day that you make them is definitely the best and the second day they were still really good too. On the third day I brought them to work (so that I didn’t eat them all) and they were still tasty, but I could tell that they weren’t as fresh because the frosting was drying out slightly. So if you are planning to bring these to a party I would either make on the day of or the night before, but either way they will definitely get devoured!!
