Ahhhhh there is nothing quite like walking into your home after a long day at work and smelling the delicious aroma of a hearty stew emitting from your crock pot. I love a good crock pot meal year round, but especially in the winter! So today I am sharing a beef stew recipe that I make in my crockpot all the time in the cold, winter months. The prep work takes a little bit of time so I will wake up earlier than usual to chop everything up and throw it all together. There is a bit of effort involved, but it’s worth it to get home and not have to do much else other than make a quick gravy to add to the stew! I’ll get home, make the gravy, and while that is thickening, I will throw one of those take and bake breads from the grocery store into the oven. Then roughly 10 -15 minutes later, I’ve got a warm, heart healthy meal on the table!

Beef Stew Recipe

(This serves plenty – I would estimate enough for a family of four for at least two meals!)

Ingredients:

3-4 lbs. stew meat

1/3 cup flour

1 teaspoon salt

1/2 teaspoon pepper

2-3 carrots, cut

2 stalks celery, cut

6 small onions, cut

6-8 small potatoes, cut

1 10 oz. package mixed frozen veggies

1 can beef broth

1/2 cup red wine

2 teaspoons brown sugar

2 teaspoons gravy master

1 can tomatoes, drained

1/4 cup flour

1/4 cup water

All my ingredients lined up and ready to go!

Directions:

1. Toss the first 4 ingredients in a large bowl.

2. Add to crockpot.

3. Add all of the cut up vegetables and the package of frozen veggies and mix well.

4. In a small bowl combine beef broth*, red wine, brown sugar, and gravy master. Whisk together and pour over meat and veggies.

*Don’t use low sodium beef broth. I did once and found I needed to add salt at the end to make up for it!

5. Stir together.

6. Add drained tomatoes.

7. Stir well.

8. Cover and cook on low for 10 – 13 hours or on high for 4 – 6 hours.

9. One hour before serving turn heat up to high. Mix the flour and water. Mix until flour dissolves, then add to the crockpot. This will help to thicken the stew.

10. Lastly, don’t forget to put your bread in the oven.

I had a former coworker introduce me to the butter years ago and I’ve been hooked ever since. I suppose it’s technically not real butter, but since it’s made with yogurt, it’s always soft so you never rip through your bread when buttering! It goes on velvety smooth and tastes heavenly! Pick this up the next time you are at the market. Trust me!

  1. This butter snob is cringing at your “vegetable oil spread with yogurt”! I mean it may be good but it is def not butter. If you want soft butter just leave your butter dish on the counter always! The stew looks great though, I’ll have to try that. I don’t use my crock pot enough. Have you thought of getting an Instantpot? Those are all the rage!

      Are you a butter snob? What is your butter of choice? I don’t like to leave my butter out because it practically melts in the summer and gets disgusting so I got in the habit of not doing that!
      I have thought about getting an InstantPot – but for lack of space I have not yet!
